1. Freshness
Certain fishes are frozen before being processed. Though it is almost impossible to tell which varieties of the sardines have been frozen before they processed. 2. Unsmoked and smoked

3. The type of oil
If you want sardines with oil then it is recommended you to choose the one with the lighter oil because lighter the oil, the better will be the sardines flesh. There are also the canned sardines soaked into the water but the texture of these is not as great as that of the oil ones.

4. Processing
