Broken rice is a high-quality product sourced from India, available in sizes of 1-3mm and in yellow or white colors. It is classified into small, medium, and average grain sizes.

The product absorbs flavors quickly and cooks faster than unbroken rice, making it perfect for porridges and congees. It has a moisture content of 14% maximum and is suitable for human consumption.

Due to the different size and shape of the grains, broken rice has a different, softer texture from "unbroken" rice, and absorbs flavours more easily. It cooks faster, using less fuel, and can be used to make rice porridges and congees, which need long cooking times.
